This class is geared towards applying competition BBQ techniques to your backyard cooking including food safety, meat selection, trimming, recipe injections, rubs, mops, sprays, sauces, temperature control, BBQ chemistry, bark formation, foiling meats, and determining doneness. The class will use a variety of smokers; from the basic WSM 18″ & 22, Memphis Wood Pellet Smokers, Green Egg Kamado, DCS Gas Grill, wood/gas fired Pizza Oven, as well as focus on wood selection and fire control.
Harry Soo is a Grand Champion BBQ Pitmaster who left Malaysia in the early 1980's to attend Texas Tech University. He fell in love with American barbecue after tasting Texas brisket. Over the years, he has developed his passion for BBQ by watching culinary shows and cooking for family and friends. He was volunteered into a Bucket List group at work after one of his co-workers saw the movie with Jack Nicholson and Morgan Freeman. One of the stretch goals he was given was to compete in a BBQ contest. Long story short, he won Reserve Champion (2nd overall) in his first contest in 2008 and begun to cook competitively. His barbeque team, Slap Yo' Daddy BBQ, was featured on TLC's BBQ Pitmasters. To date, he has won 27 Grand Championship awards, 70+ first places for BBQ in continental United States, Canada, Hawaii, and England. This year alone he has won an astounding 40% of the BBQ competitions he has been in. Harry has trained over 500 students across the country and many have gone on to become Grand Champion Pitmasters.
